(serves 4)
- 4 tsp olive oil
- 2 Tbsp lemon juice
- 1/2 tsp. dried basil
- 2 tsp minced garlic
- 1/4 tsp. dried oregano
- 1/8 tsp black pepper
- 1/3 c. feta cheese
- 1 large tomato sliced thin
- 1 small cucumber sliced thin
- a 12 oz. sourdough baguette
Cook and peel 1 1/2 lbs of Stir Fry Prawns or use 3/4 lb Oregon Pink Shrimp. In a small bowl, make a vinaigrette by combining oil, lemon juice, garlic, and spices. Set aside. Cut bread into fourths; slice in half lengthwise. Brush bottoms of each with 2 tsp vinaigrette. Divide feta equal on sandwich tops. Broil both halves just until cheese is melted. Arrange cucumber and tomato slices on sandwich bottoms. Divide shrimp equally among the four sandwiches and drizzle with the remaining vinaigrette. Top with the melted cheese.
