Dungeness Crab Gazpacho Soup

  • 1 pound Dungeness Crab Meat
  • 1/4 cup red wine vinegar
  • 32 oz. V-8 juice
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 tsp. salt/pepper
  • Juice of 2 lemons

ALL CHOPPED:

  • 1 c. bell pepper
  • 1 cucumber
  • 1 c. celery
  • 1/2 bunch parsley
  • 1 c. tomatoes
  • zest of 1 lemon

For SMOOTH gazpacho, blend all ingredients (except Crab) in a blender or food processor until smooth. Gently fold in crab meat before serving.
For CHUNKY soup, mix together all ingredients, then gently fold in Crabmeat.

Chill well before serving. As a garnish, use lemon wedges, parsley sprigs, croutons, etc. Serves 4. Best served chilled.
